Souffle' of Spinach

This is a very simple recipe that save your life many many time! Is healthy, vegetarian, full of proteins, easy and fast to make! You only need an oven and some small containers to put it in, or a nice oven plate that can also go on the table. Let's see the ingredients

  • 500 gr. of Frozen Spinach
  • 250 gr. Ricotta Cheese
  • 2 eggs
  • 100 gr. Parmiggiano
  • salt
  • pepper
  • left over cheese in the fridge


Boil the Spinach for not too long, than squeeze all the water out and cut them a bit.
Do not mix them whit the mixer or your Suffle' will be like a disgusting sponge.
Open the eggs, whip the whites till they are hard but fluffy.
Open the ricotta, stir it till is a cream, add the eggs yolks, the parmiggiano, the cheese that you have left over in the fridge cut in small pieces, salt, pepper and naturally the spinach.
Add the white of the egg at the ricotta and mix with the help of a wooden spoon from the bottom going up.
Pour the cream in the small oven bowl or in the big oven dish.
If you are using an oven dish that is not suitable for the table, put at the bottom also the oven paper.
Pour some bread crumbles over the cakes.
Put them in the oven at 180°C for 45 min.
Serve warm or cold.
